Coyote Café has earned an international reputation for bringing innovative Southwestern cuisine to the international stage since 1987.
The Coyote Café has been a Santa Fe institution since its inception in 1987. It was founded by celebrity Chef Mark Miller. Chef Miller helped to bring modern southwestern cuisine to the forefront. In January of 2008 Chef Miller sold the restaurant to his General Manager Tori Mendes, his sommelier Quinn Stephenson, and Chef Eric DiStefano.
Chef DiStefano has brought a fresh perspective to the Coyote Café. His signature Elk Tenderloin and Fiery Hot and Sweet Mexican White Prawns have become classics at the Coyote Café.
